Ingredients
3-4 Red bell peppers, seeded, stemmed, and rough chopped.
1 Lg onion, peeled and rough chopped
1 garlic bulb, peeled , with 2 cloves minced and set aside
1 c-2 c EVOO with 1 Tbls set aside
Kosher salt & Black pepper to taste
1 tsp pimenton dulce (spanish sweet smoked paprika)
2 oz limoncello
1/2 c kalamata olives, sliced in half length wise
1/2 c baby artichoke hearts, halved
1/4 c non pareil capers
2-3 slices proscuitto
2 T freshly chopped parsley for garnish
