This Oregon Sweet Potato Ravioli is a great balance of sweet and savory, highlighted with brown sugar, mascarpone, and dried cranberries on top of savory parmesan, ricotta, chevre, and finished with rosemary. The result is a ravioli that could be tossed in cinnamon sugar for a savory dessert or bathed in brown butter for a seasonal appetizer.
