~Za’atar is a dried condiment made from the dried herbs, mixed with sesame seeds, dried sumac, and salt, as well as other spices. Used in Levantine cuisine, both the herb and spice mixture are popular throughout the Middle East.
~Ras el hanout is a spice mix from North Africa. Ras el hanout is used in many savory dishes, sometimes rubbed on meat or fish, or stirred into couscous or rice. The mix is generally associated with Morocco, although neighboring North African countries use it as well. ~Hatch chili refers to varieties of species grown in the Hatch Valley. The soil and growing conditions in the Hatch Valley create a unique soil bed which contributes to the flavor of chilis grown there. It is also a prominent part of New Mexican culture. It is the official state vegetable and the official state question is “Red or Green?”.
